Zucchini Fritters with Mint and Feta

Ingredients

  • 500 g zucchini, grated
  • 200 g feta cheese, crumbled Parnassos
  • 1 cup fresh mint leaves, chopped
  • 1/2 cup flour Grands Moulins de Paris
  • 1 egg
  • 1 tsp baking powder
  • Salt Afrina and pepper Batavia
  • Oil Sanola for frying

Instructions

  1. Drain the grated zucchini of excess moisture.
  2. In a bowl, mix the zucchini with feta, mint, flour, egg, and baking powder.
  3. Season the mixture with salt and pepper, and mix well.
  4. Heat olive oil in a frying pan and fry small spoonfuls of the mixture until golden brown.
  5. Drain the zucchini fritters on paper towels and serve hot.
