Zucchini Fritters with Mint and Feta
Ingredients
500 g zucchini, grated
200 g feta cheese, crumbled Parnassos
1 cup fresh mint leaves, chopped
1/2 cup flour Grands Moulins de Paris
1 egg
1 tsp baking powder
Salt Afrina and pepper Batavia
Oil Sanola for frying
Instructions
Drain the grated zucchini of excess moisture.
In a bowl, mix the zucchini with feta, mint, flour, egg, and baking powder.
Season the mixture with salt and pepper, and mix well.
Heat olive oil in a frying pan and fry small spoonfuls of the mixture until golden brown.
Drain the zucchini fritters on paper towels and serve hot.
