Octopus with Mastiha and Potatoes

Ingredients

  • 1 octopus Moysefood, cleaned
  • 4 large potatoes, diced
  • 1/2 cup olive oil Theo
  • 1 tsp Chios mastiha Drops, ground
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 cup white wine Ktima Alfa
  • 1/2 cup chopped tomatoes
  • Salt Afrina and pepper Batavia
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil and sauté the onion and garlic until translucent.
  2. Add the octopus and sauté for 5 minutes.
  3. Deglaze with the wine and let the alcohol evaporate.
  4. Add the potatoes, tomatoes, mastiha, salt, and pepper.
  5. Cover and cook on low heat for about 1 hour, until the octopus and potatoes are tender.
  6. Garnish with chopped parsley before serving.
