Octopus with Mastiha and Potatoes
Ingredients
1 octopus Moysefood, cleaned
4 large potatoes, diced
1/2 cup olive oil Theo
1 tsp Chios mastiha Drops, ground
1 onion, finely chopped
2 cloves of garlic, finely chopped
1 cup white wine Ktima Alfa
1/2 cup chopped tomatoes
Salt Afrina and pepper Batavia
Fresh parsley for garnish
Instructions
In a large pot, heat the olive oil and sauté the onion and garlic until translucent.
Add the octopus and sauté for 5 minutes.
Deglaze with the wine and let the alcohol evaporate.
Add the potatoes, tomatoes, mastiha, salt, and pepper.
Cover and cook on low heat for about 1 hour, until the octopus and potatoes are tender.
Garnish with chopped parsley before serving.
